Some people are very particular about chicken wings. They would never consider amazing wings to be made at home much less in the oven! Today I’m sharing my favorite way to make wings without the mess of frying.
The Ingredients
- 10-12 Whole Chicken Wings cut into drumettes and flats. Here’s how to prepare chicken thanks to thecookful.com.
- 2 TBSP Aluminum-Free Baking Powder
- 1 Tsp Kosher Salt
- Sauce or rub of choice
The Instructions
The first thing you want to do is prep the pan and your oven. Set the oven to 250ΛF and line your baking sheet with aluminum foil. Place a rack on top of the foil and spray with cooking spray.
Take the prepared chicken wings and toss them in a bowl with the baking powder and salt. MAKE SURE you’re using baking powder and NOT baking soda! You’re looking to just evenly coat them but every single nook doesn’t need to be covered. The baking powder is what makes the skin CRISPY!
Now, place the wings evenly on the rack and make sure they’re not touching one another. Bake in the 250ΛF oven for 30 minutes. After the 30-minute timer alerts, up the temperature in the oven to 425ΛF and bake for another 45 – 50 minutes, turning once about halfway through. I do this so that I get even crispiness on the wing.

When you’ve achieved the desired crispiness, remove the wings from the oven and let them rest for about 5 minutes.
Next, and this is my favorite part, toss them with your favorite sauce. We LOVE homemade Buffalo Wing sauce or Garlic Parmesan Sauce (see recipe card below).
That’s it! Serve with chunky BLUE CHEESE dressing for the perfect wings!
