Ingredients

For the muffins:

  • 1/4 Cup Butter
  • 1/4 Cup Vegetable Oil
  • 3/4 Granulated Sugar
  • 1/3 Cup Brown Sugar
  • 2 Large Eggs
  • 1/2 tsp Baking Soda
  • 1 1/2 tsp Baking Powder
  • 1 tsp Cinnamon
  • 1 tsp Allspice (or sub another tsp cinnamon)
  • 1 tsp freshly ground Nutmeg
  • 3/4 tsp salt
  • 1 tsp Vanilla Extract
  • 2 2/3 Cup All-Purpose Flour
  • 1 Cup Milk

For the glaze

  • 3 Tbsp Melted Butter
  • 1 Cup Powdered Sugar
  • 1 tsp Vanilla Extract
  • 2 tbsp hot water

Instructions

For the muffins:

Preheat the oven to 425Β° and prepare a cupcake pan with paper liners. In a stand mixer, cream butter, oil, and sugars until smooth. Technically, it doesn’t get super smooth because of all the sugar but make sure it’s combined well. Then, add eggs one at a time until fluffy.

Now add the Baking Soda, Baking Powder, Cinnamon, Nutmeg, Salt, Vanilla and stir. We actually grate our nutmeg using this fine grater. It’s the best one and I’ve had it for years. Follow that with half the flour, then half of the milk and beat until combined. Add the rest of the flour and the last of the milk and beat well. It should look like delicious cinnamon, spice cupcake batter.

Now for the fun part! Spoon batter into cupcake liners. We like to use an ice cream scoop to keep it from getting too messy. Now just bake for 15-17 minutes or until the tops spring back. Let the muffins cool for 5-10 minutes before adding the glaze.

For the glaze:

Mix all of the glaze ingredients in a small bowl until smooth. Once the muffins are cooled (after about 10 minutes), dip the top into the glaze and allow the glaze to firm up a bit. Repeat a second time and allow to firm up again.

Now just grab one for you and one to share! Enjoy!
